How Gud (Jaggery) Powder Is Made — From Sugarcane to Spoon

The short answer: gud powder is made by crushing ripe sugarcane, clarifying the juice, slow-cooking it in open pans until it thickens into jaggery, and then grinding the cooled jaggery into a fine, free-flowing powder — no refining, no chemicals.

Step 1: Selecting and crushing the cane

Everything starts with mature, juicy sugarcane. The cane is crushed to extract fresh juice — the only raw material in genuine gud powder.

Step 2: Clarifying the juice

The juice is rested and skimmed so natural impurities rise and are removed. Traditional makers use plant-based clarifiers rather than chemical bleaching agents.

Step 3: Slow open-pan cooking

The clarified juice is boiled in wide open pans and stirred continuously. Water evaporates, the syrup darkens to a deep gold, and the kitchen fills with the unmistakable caramel aroma of fresh gud. This slow reduction is where jaggery gets its flavour.

Step 4: Setting and grinding

The thickened syrup is poured out, cooled and set. Once firm, it is ground into a fine powder and sieved for an even, quick-dissolving texture — all the tradition of block gud with none of the grating.

Step 5: Testing and packing
