5 Traditional Indian Recipes Made Better with Gud Powder

The short answer: anywhere a traditional recipe calls for grated or melted gud, fine jaggery powder does the same job faster — it dissolves evenly, measures like sugar and never needs grating. Here are five classics to start with.
1. Atta ladoo
Roast whole-wheat flour in ghee until nutty, take it off the heat, let it cool slightly, then mix in gud powder and cardamom and shape into ladoos. The powder blends evenly with no jaggery lumps.
2. Gud wali chai
Brew your regular masala chai, take it off the boil, and stir in a teaspoon of gud powder per cup before straining. Caramel-sweet chai, the way it's made in villages across North India.
3. Til (sesame) chikki
Melt gud powder with a spoon of ghee on low heat until it bubbles, stir in roasted sesame seeds, spread thin on a greased plate and cut before it sets. Powder melts faster and more evenly than chopped block gud.
4. Atta halwa
Make a gud syrup by dissolving powder in hot water, then pour it into ghee-roasted atta and stir until glossy. Rich colour, deep flavour, no white sugar.
5. Puran poli
Cook chana dal soft, mash with gud powder and cardamom for the puran filling, stuff into dough and roast with ghee. The powder disappears into the dal for a smooth, even filling.
One swap rule to remember
