Why Jaggery Colour Differs: Golden, Brown or Suspiciously Yellow?

The short answer: natural jaggery ranges from pale gold to deep brown depending on the sugarcane variety, the season, and how long the juice was cooked. Colour alone doesn't grade quality — but an unnaturally bright, uniform yellow is a warning sign, because some producers use whitening agents to make jaggery look "cleaner".
The natural reasons colour varies
- Cane variety and soil: different cultivars caramelise to different shades.
- Season: early-season cane tends to give lighter gud; late-season darker.
- Cooking time: longer open-pan reduction deepens colour and flavour — the same reaction that browns caramel.
- Age: jaggery naturally darkens a little in storage; that's normal.
The unnatural reason: whitening treatment
Market-going gud is sometimes treated to look pale and bright because buyers wrongly equate light colour with purity. FSSAI's standard for jaggery therefore explicitly tests for added colouring matter — a parameter our lab report returns as Absent. Golden-brown, slightly varying batch colour is what honest jaggery looks like.
How to check what you're buying
Ask for the brand's lab analysis (a genuine brand will show it), check the ingredient list is just sugarcane jaggery, and treat "impossibly pale and perfectly uniform" as a reason to ask questions — not as a mark of quality.
